Farm-Fresh Vegetable Frittata

This versatile frittata is the perfect way to showcase whatever is fresh from the farm stand. Use any combination of seasonal vegetables. This recipe is a favorite at our Farm Table Dinners and works beautifully for breakfast, brunch, or a light dinner.

Instructions

  1. Preheat oven to 375 degrees F
  2. Saute onion and garlic in olive oil in an oven-safe skillet until softened
  3. Add chopped seasonal vegetables and cook until just tender, about 5 minutes
  4. Whisk eggs with cream, salt, pepper, and herbs
  5. Pour egg mixture over vegetables in the skillet
  6. Sprinkle with grated cheese
  7. Cook on stovetop over medium heat for 3 minutes until edges begin to set
  8. Transfer to oven and bake for 15-18 minutes until golden and set in center
  9. Let cool 5 minutes before slicing into wedges
