Instructions
- Preheat oven to 375 degrees F
- Saute onion and garlic in olive oil in an oven-safe skillet until softened
- Add chopped seasonal vegetables and cook until just tender, about 5 minutes
- Whisk eggs with cream, salt, pepper, and herbs
- Pour egg mixture over vegetables in the skillet
- Sprinkle with grated cheese
- Cook on stovetop over medium heat for 3 minutes until edges begin to set
- Transfer to oven and bake for 15-18 minutes until golden and set in center
- Let cool 5 minutes before slicing into wedges
